The two enhancement MOSFET devices (P and N) that come with the Pspice demo are power, how do I get regular MOSFets for electronics?

How did you come to assume that the devices were "power" rather than "regular" MOSFETs? From the device parameters specified? Note that the device parameters in the PSpice models are extracted parameters, rather than datasheet parameters. These parameters are all described in the PSpice Reference Manual, pspcref.pdf, see the section on MOSFETS, this will include a description of the model and the circuit representation for the model, you can see that Rd, Rd and Rds are required parameters for the model, regardless of the power rating.
