A quick question : how can one get MIMcap capcitance above 1.995 fF apart from using them individually in series ?

Also, what about layout of such a large MIMcap ?

Use a larger Width and Length. If the Calculate Parameter cyclic is "capacitance", you can alter the Width and Length parameters above 1u, and the capacitance will increase too. Same for the layout.
