It seems as if you did not reference your design library on the technology library, therefore no layers are shown.

Go in the Command Interpreter Window and select in the menu bar
    Tools > Technology File Manager
to open the Technology File Manager

Then, click on Attach... and reference your design library (mylib) on the technology library (gpdk180).

    Afterwards, confirm with Ok.

    A few things:

    1. It wasn't clear what you were trying to do with "double-clicking" the instances (that would be trying to edit-in-place the instances)
    2. I suspect that what you are trying to do is increase the display stop-level. This is usually achieved by using the shift-F bindkey (to expand to 32-levels) or ctrl-F (to reduce back to 0). You can also change this in the Options→Display form (set the Display Stop Level to a high number), or in the Options toolbar there's a box to change the stop level. Then you can see the contents of the transistors. You probably don't need to alter the "valid" layers.
    3. If you do want to edit the valid layers do this using the Right Mouse Button over the layer palette - you have to do this in the correct place though. You need to do the Right Mouse button click with your cursor in the upper part of the palette (not over the list of layers themselves) - for example over the word "Valid".
